A good Caesar salad only needs a few ingredients: crunchy romaine lettuce, anchovy-rich Caesar dressing, croutons, and Parmesan cheese. But for this fun take on the classic, we replace the croutons with sour cream and onion chips mixed in the salad and scattered on top, for extra crunch and flavor. Use the smaller chips in the salad and save the larger ones for scooping up the dressed chopped greens. Make your own Caesar-Style Dressing or use your favorite store-bought dressing to save time. 

This salad is great on its own as a first course or appetizer but if you need a little more staying power, add grilled chicken, shrimp, salmon, or canned chickpeas for some protein. Or grab a tortilla and wrap the entire thing for a Caesar salad wrap.

  • What are the ingredients in Caesar dressing?

    Traditional Caesar dressing has lemon juice, olive oil, eggs or egg yolks, Worcestershire sauce, anchovies, garlic, Dijon mustard, Parmesan cheese, and black pepper whisked until emulsified to achieve its creamy texture. Some dressing recipes call for creamy ingredients such as mayonnaise or sour cream to avoid the raw egg.

Make ahead

If making the dressing from scratch, you can prepare the dressing up to a week ahead of time and refrigerate it. The chopped romaine lettuce can be prepped up to a few hours ahead and refrigerated until ready to use, just make sure romaine lettuce is dry when you are chopping it.

Ingredients

  • 2 (5-ounce) packages baby romaine lettuce heads, cut into 1/2-inch pieces (about 8 cups)

  • 1/2 cup Caesar-Style Dressing or store-bought dressing

  • 4 cups sour cream-and-onion kettle-cooked potato chips, divided (about 2 (4-ounce) bags) 

  • 1 ounce Parmesan cheese, grated (about 1/4 cup), plus more for topping

Directions

  1. Gently toss chopped lettuce and Caesar dressing in a large bowl until combined. Crush 2 cups (about 1 bag) of the potato chips into 1/2-inch pieces; add to lettuce mixture. Stir in cheese and mix until combined. Top with remaining whole potato chips and more grated cheese. Serve immediately.
